Dog Days of Fall & Race for the Cure

I am totally in love with my dog. She's the most lovable, sweetest, funniest pup I know. Recently we took her to the park, had a picnic, and she ate ice cream. What a great life for a dog.

So enough doggie photos. Earlier this month I did the Susan G. Komen Race for the Cure on Daniel Island. It was a 5k and it was through a pleasantville like neighborhood on Daniel Island. The race raised money for Breast Cancer Research. Hopefully one day we can all celebrate the end of cancer. I did the race with a bestie of mine, Samantha, and some co-workers.

It felt great to walk for a wonderful cause and to see so many survivors out there walking as well. I'm working on my own personal fitness and health goals so to combine fitness and  fun together was just what I needed to stay on track.

My Baking Addiction

So..I've dabbled a little in some cake baking and creating you could say. I've always wanted to be a 'Cake Lady', you know, that awesome lady that bakes amazing cakes for birthdays, weddings, baby showers and more. Her house always seems to smell like vanilla and she can whip up a 3 tier cake in a few short hours. Well, I had the vanilla part down, but it's hard work to make that 3 tier cake.

My cake recipe (after some trial and error) actually taste pretty damn good. My favorite recipe is a yummy vanilla cake made with flour, sugar, eggs, milk, butter, veggie oil, almond and vanilla extract, and sour cream. The amounts ,of course, are a secret but my frosting recipe is pretty easy.

Buttercream Icing
-2 sticks of unsalted sweet cream butter
- 2-3 cups of powdered sugar
-2-4 tablespoons of milk
-vanilla and almond extract
(whip in mixer)

I've actually recently retired my apron since school began. 40+ hours a week spent working and then studying really take a toll on me. I love making cakes for people but I have to realize I can't do it all. So I only bake when I want to. I need more time to be me and just relax when time allows. Also, I need to lose some serious LBs so tasting frosting just isn't in my weight loss program. :-)
